I had a delicious Protein Smoothie for breakfast with some toast.

Lunch was a small taste of the Creamy Italian White Bean Soup because I was cleaning out all my closets with my mom.  It was great to see her and she’s the best with organizing.  I am feeling much more peaceful because the house is tidy and clean 😀

Sorry to say that dinner was the rest of the soup and some rice crisps.  I need to go shopping and will do that tomorrow.

Been busy working on my webdesign site and trying to fit World of Worldcraft (online game) in so I can play with my sons.

Today I had 4 pieces of cinnamon toast that I made with Millet and Flax Bread, Earth Balance spread, cinnamon and Agave Nectar.  It really hit the spot.

For lunch I made some fresh pesto sauce and tossed it over some gluten-free pasta, with marinated tofu (marinated with Bragg Liquid Aminos, and tahini)

For dinner my mom came to visit and we went for Thai.  I was able to have Tofu Pad Thai that they made vegan for me 🙂

I feel like I’m fading out of my enthusiasm for the cleanse.  I guess the 2 weeks before the cleanse researching, shopping and tasting, plus the never ending ingredient list reading, health food store shopping and endless food preparations I’m tired.  It would be great to have a restaurant to go to that had these amazing meals already prepared.  Why hasn’t anyone opened a Vegan food chain yet????

Anyway, I started the day with 2 pieces of Sami’s Millet and Flax toast w/Earth Balance butter.  I was VERY unsuccessful at making the Gnocchi (because I didn’t have all the right ingredients) so I decided to make the Creamy Italian White Bean Soup, which was delicious as usual.  I ended up needing to give my kitten away so my evening was not a restful one.  I made a Protein Smoothie for my friend and I and we shared a bag of Veggie Chips.

When I got home I was really sad that Izabella was gone, I wish it could have worked out for her and I.   Through my tears I nibbled on some dried fruit and nuts and went to bed.

Felt like having the waffles again, so it was gluten-free waffles with strawberries, banana and agave nectar. Yummmmm Yum!  Then off to work where I had my homemade Vegan Pumpkin Soup and a bag of Birdseye frozen whole grain rice with veggies.  I need to mention that I went off my Prilosec for a few days and was really hoping that this cleanse and lack of food irritants would enable me to eliminate medication.  This is NOT the case for me … not now anyway.  I felt soooo sick to my stomach today, I swear felt like I swallowed a basketball.  There was such a tightness in my chest, you might know what I mean like I swallowed a LARGE, HARD pill or something and it was stuck.  I had to get some Prilosec ASAP.  Oh well.

For dinner I had Artichoke Hummus Pizza which was good as usual.  I tried to make the Gnocchi recipe in Kathy’s book, but at 9:15pm I got cranky and tired after it was soooooooooooo sticky I couldn’t gather it together.  I was going to throw it away but instead I grabbed it with some parchment paper, put it in a ziploc and threw it in the frig.  I might attempt this again tomorrow.  I am combining 2 of her recipes to make an Gnocchi and Pesto sauce.  That’s all for now.

Started the day with a Banana, Strawberry, Peanut Protein smoothie.  Followed by Angel Hair Pasta, Tofu w/Veggies and peanut sauce for lunch.  Then we had some grapes and corn chips with flax seeds.

Dinner was Artichoke Hummus Pizza then rice crisps and dried blueberries.  I am achy like I have a flu or something…. so this post is going to be short.

I started the day with a banana…. hoping to “slow” things down a bit on the hind end – if you know what I mean.  My friend can’t get things to move along and well… I can’t stop em.  I guess it’s interesting to see how the cleanse affects people differently.  We eat almost the very same food each day and yet we are responding in different ways.   If she loses a ton of weight I might be slightly jealous…. ok very jealous Ha ha!

I picked up some canned pumpkin, I guess they have that in the middle isle because it’s fall and we should be considering Thanksgiving right??  I hate the way the retail stores push us into the holidays.  Anyway, I’ll be googling some vegan recipes for pumpkin.  I need to also make something with Lentils for my friend and her daughter (she is low in iron).

For daytime snack I had a dried fruit and nut mixture…. I buy the individual items and make my own so I can eat only the things I like.

For now I just can’t remember lunch???? What the heck?? Anyway, if I remember I’ll post it here.

Made the Vegan Pumpkin soup and it was VERY easy and VERY tasty!  I’ll have this for lunch/or dinner tomorrow.

For dinner I had some yummy Pizza , some Artichoke Hummus and Sami’s Millet and Flax Chips.

Ok I googled vegan pumpkin soup and this is what I came up with … so I’m making this tonight.

Ingredients:

  • 1 tablespoon margarine
  • 1 onion, diced
  • 1 16 oz can of pumpkin puree
  • 1 1/3 cups vegetable broth
  • 2 cups soy milk (I am using coconut milk because I have it)
  • 1/2 tsp nutmeg
  • 1/2 tsp pumpkin spice
  • 1/4 cup sugar
  • salt and pepper to taste

Preparation:

In a large saucepan, cook the onion in the margarine for 3-5 minutes, until onion turns clear. Add remaining ingredients, stirring to combine. Cook over medium heat for another 10-15 minutes. Enjoy!

Makes 4 servings of vegetarian pumpkin soup.

Vegan Pumpkin Soup

With a great start to a gorgeous day I had 2 Gluten-Free Waffles, with strawberries, bananas and Agave Nectar.  It was stellar!  Snapped a photo to put here:

Gluten-Free Waffles

For lunch I had that really delicious soup I didn’t have time to eat the other day.  It is called Creamy Italian White Bean Soup.  It reallllly hit the spot and was very tasty.  Along side of that I had the Quinoa and marinated tofu.

For dinner I ate a fresh salad with black olives (I mention that because the juice of the olives is what I use instead of dressing).  The remainder of the Quinoa and Tofu and for after dinner snack it was a banana and Earth Balance Peanut Butter.  A delicious ending to a great day.

Ingredients:

2 cans Cannellini beans (drained)
2 Tbsp olive oil
1 Large onion, chopped
3 garlic cloves, crushed
1 tsp. fresh thyme
1 tsp. fresh oregano
2 bay leaves
8 cups vegetable stock
1/4 cup fresh basil, chopped
Juice of 1/2 lemon
salt and pepper to taste

Heat olive oil in a large pot over medium heat.  Add the onion an cook for 5 minutes.  Add the garlic and cook for another minute.

Add the beans, thyme, oregano and bay leaves.  Stir in the stock and bring to a boil.  Lower the heat, cover the pot, and allow to gently simmer for 2 hours or until the beans are tender (mine cooked less time because I used canned beans).

Allow to cool slightly and remove the bay leaves.  Puree 1/2 the soup in a food processor or blender then return to the pot.  Add the basil, lemon juice, salt and pepper.  YUM!

Creamy White Bean Soup

This morning started with Millet and Flax toast with Earth Best spread and Vegan cheese.  I had a lot of food shopping to take care of today.  A long trip to the local health food store, then the grocery store.  I picked up some more pizza crust, agave nectar, millet and flax rolls, natural peanut butter, raisins, dehydrated papaya, dried blueberries, dried lentils, FROZEN GLUTEN FREE WAFFLES (which I snacked on today and they were YUMMY), bananas, strawberries, grapes, plum tomatoes, fresh basil and more I’m sure I’m forgetting.

For lunch I searched for a vegan burger but couldn’t find anything in the fresh or freezer section that did NOT contain some form of gluten or wheat.  I went to my iphone and googled a recipe and came up with this link:  Black Bean Burger it was very tasty and fairly easy to make.  We ate this on Sami’s Millet and Flax Roll that I toasted in the oven.  I wished I had a pickle because I think it would have made the difference.

Dinner was just a reheat of Veggie Chow Mei Fun w/steamed Tofu.  After dinner snack was some raisins and craisins.
